Pro tip: there's actually a way to turn this behavior off by adding a line to your revit.ini file. Here's how:
Navigate to C:\Users\<username>\AppData\Roaming\Autodesk\Revit\<product name and release> and open the revit.ini file using Notepad. Locate the [UserInterface] section and add SlowDoubleClickInProjectBrowser=0 (see image above).
On restarting Revit, the double-click rename behavior will be turned off. Now, the traditional right-click is the only way to rename views in the Project Browser.
